If you’re yearning for a healthy, gluten-free flatbread, try Socca!

Popular in Europe, this naturally gluten-free chickpea flatbread is irresistible topped with olive oil and garlic, goat cheese or fresh tomatoes and olives. Chickpea flour (also called “garbanzo bean flour”) is packed with protein, and has a nutty taste. While baking, your kitchen will teem with the most wonderful aroma! Here’s everything you need to know to make Socca:
 
1. The basic batter is equal parts chickpea flour, water and a few tablespoons of organic olive oil.
2. Let the batter rest 30 minutes before cooking.
3. Preheat the oven to 450 degrees and then heat a cast iron skillet under the broiler for 5 minutes before cooking.
4. Broil the Socca for 7-9 minutes.
 
Socca success looks like a bread with crispy edges and the interior will be moist and creamy.
